




I got a chance to spend some time with my friend Emily this weekend, and she had the bright idea to take a twist on the classic Rice Krispie Treat with my favorite breakfast cereal ever… Lucky Charms! They were SO good, and perfect for a late-night snack!
The recipe is simple, all you need is:
- 6 cups of Lucky Charms cereal
- 10oz bag of mini marshmallows
- 3 tablespoons of butter
- pinch of salt
To start, melt the butter and marshmallows in a microwave safe bowl. We took time to stir the mixture (with a buttered spatula) after each 30 seconds in the microwave. Overall, it took about 90 seconds to melt the marshmallows. This will vary depending on the power of your microwave. Add a pinch of salt if your butter is unsalted.
Measure out 6 cups of Lucky Charms cereal and pour into the marshmallow mixture. Stir it all together until the marshmallow and cereal are spread evenly.
Use cooking spray or butter to grease a glass baking dish and spread your cereal mixture into the pan. Use your buttered spatula to smooth the treats into the pan. Allow to cool for about 2 hours before cutting into bars.
Once cut into bars, serve and enjoy!
